We are growing zucchini in our little garden and just harvested three big ones, so prepare for several zucchini recipes! Zucchini is high in various vitamins (especially Vit A), minerals, fiber, and antioxidants. You can also enjoy it raw in salads. My family and I really like zucchini fries, but they need to be crispy, which is why I like this recipe. It was a hit!
